How to cook Tomato Confit for my Grilled Chicken Panini

This dish is a simple yet delicious combination of grilled chicken, cream cheese and spinach on a toasted bread. It can be made using your favorite bread and can be served hot or cold. The chicken is marinated and cooked in a panini press. The chicken can be sliced thinly and fried in a skillet over medium heat. The cheese and spinach mixture will melt on the grill, while the caramelised onions and fresh spinach will add a little zing.

If you haven’t already, check out this month’s participants in the Foodbuzz 24, 24, 24. I participated this month for the fist time and put together a great ‘Paninis and Bellinis‘ meal for my friends and I. Yup, I kinda chose this idea because it rhymes!

I already knew I would be serving my favorite Grilled Chicken Panini. Kyle and I made plenty of these for his sister’s bridal shower back in December, and since then they have been my favorite go-to panini.

Sounds simple enough, right?

Instructions

  • Chop up the tomatoes and push off your cutting board into a saute pan (I say push off the cutting board because you want the inside juices and seeds).
  • Add all other ingredients and turn heat to medium low.
  • Simmer for 10 - 15 minutes, until thick. Use either warm or cold.

Notes

Tomato Confit is great on paninis, sandwiches and especially bruschetta. The sugar brings out the sweetness in the tomatoes which I normally don't get to taste when I eat them raw. This was enough for 6 paninis, so technically everyone only got a teaspoon of sugar. Not bad!
