Ingredients
Method
- Chop up the tomatoes and push off your cutting board into a saute pan (I say push off the cutting board because you want the inside juices and seeds).
- Add all other ingredients and turn heat to medium low.
- Simmer for 10 - 15 minutes, until thick. Use either warm or cold.

Notes
Tomato Confit is great on paninis, sandwiches and especially bruschetta. The sugar brings out the sweetness in the tomatoes which I normally don't get to taste when I eat them raw. This was enough for 6 paninis, so technically everyone only got a teaspoon of sugar. Not bad!
