Best way to make Mexican Cilantro Lime Chicken

You know what I love? (besides a good meal of course)

A surprise in the mail!

It seems like anytime I order something online, by the time it reaches me I have already forgotten I ordered it, so its like a little surprise. But this time I hadn’t ordered anything, instead I won a giveaway on Steph Chows and I had completely forgot!

I got my beautiful earrings in the mail last week, and have already worn them twice. Thanks again Steph! The earrings were made by Gardanne, to see more of her beautiful jewelry, check out her store on Etsy.

Now go put on your favorite earrings and make this chicken tonight!

Kyle’s sister came over the night I made this, and she lives in Italy so I thought some Tex-Mex flavors might be appreciated. The simple recipe came from Cooking Light magazine, and it was very delicious. I can imagine something like this being served at Chili’s, except not as healthy and homemade of course :) I served the chicken with brown rice (that had a hint of cumin) and corn on the cob.
