Not even less than 24 hours before I made this stuffed spud, I asked Kyle what he thought about the idea. I said something like ‘Hey how does this sound, a cheesy broccoli stuffed potato?‘ and his reply was something like this ‘Eh, I don’t think so..
What I envisioned in my head is exactly how it turned out. Creamy mashed potato, gooey cheese and tender broccoli. It came together perfectly in my head, and perfectly on the plate. I’m sure in his head though, he was imagining something extremely healthy, full of broccoli, and lacking in flavor. Well, he was right about two of those points. It is mostly healthy, and it is full of broccoli, but this twice baked potato sure isn’t lacking in flavor.
So last night I am cooking our dinners. I, like a lot of ya’ll, cook two dinners a night. I am used to it and don’t mind it.

I grilled a nice big Rib Eye for Kyle. It had a great marinade on it, and was full of marbling. I also made him sautéed greens and buttered Texas toast. Sounds good huh? You don’t even have to say it, he’s spoiled.
And I had this broccoli and cheddar twice baked potato. The same potato that I asked him about less than 24 hours earlier. The same potato he turned his nose at. The same potato he was trying to bribe me with his steak for.

  • Poke a few holes in the potato with a sharp paring knife. Coat in olive oil and salt. Bake uncovered for 1 1/2 hours. Let cool at least 30 minutes before handling.
  • Slice off top quarter of potato. Scoop out as much of the potato as you can without breaking the skin and place in a bowl.
  • Add the butter and sour cream to the mashed potato, and mash until everything is melted, and smooth. Add the salt and pepper and combine.
  • Add the cheddar cheese and broccoli pieces to the mashed potato, and place back inside the skin gently. Top with a little more cheese, and bake for 30 minutes. Top with sour cream and enjoy.

This was such a satisfying and comforting dinner, not to mention it's vegetarian and not too bad for you. Everyone loves mashed potatoes, and most people will tolerate broccoli when covered in cheese, so why not combine the two classics? This recipe could easily be adapted to whatever you or your family likes. I considered adding chicken or mushrooms, but I think it was perfect just the way I made it. And apparently Kyle thought so too, because this is what he requested for dinner tonight.
