Easy-to-make Trail Mix Cupcakes for the Cupcake Crawl

I’m not fond of pub crawls, as I am not too fond of pubs or drinking. I enjoy a nice glass of wine or a cold frothy beer every once and a while, but not enough to ‘crawl’ to get to my next one!

I have had the idea of Trail Mix Cupcakes in my head for a while now, but never had an excuse to make them. Now I do! I love Trail Mix (Almonds, Peanuts, M&Ms;, Raisins, Cashews) and thought all those flavors combined in a nutty cupcake would taste great. And it did.

I had a half a bag of trail mix left over and it reminded me of when I was a kid and my Mom would buy the same kind of Trail Mix. Anytime my Mom and StepDad were gone I would get into the bag and pull out all the M&Ms; and eat them! The colorful bag of trail mix they left would be nuts and raisins when they returned. Sorry Mom and Tony, I guess I owe you some Trail Mix cupcakes (M&M;’s included!).

Instructions
 

  • preheat oven to 350 degrees
  • Combine the first four ingredients in the bowl of an electric mixer.
  • Next add the softened butter cubes, egg and egg yolk, almond extract and milk. Mix until fully combined (there may be small pieces of butter in the batter, thats OK!)
  • Fold in the trail mix. I did grind the nuts so they weren’t as big, but left the M&Ms; and raisins whole.
  • Divide between 12 prepared cupcake wrappers and sprinkle whole nuts, raisens and M&Ms; on top. Bake for 20 minutes. Let cool.
