Well readers I have reached the 50 pounds lost mark. I began living a more healthy life January 1st (I took my resolution serious this year). All I have to say is anything is possible when you cut meat from your diet and exercise everyday. But I feel like I need to add: results not typical. I have always been able to lose weight quickly. It is the maintaining part that I have always had trouble with but I feel like I have really changed my life, eating and cooking habits (and being introduced to food blogs and so many healthy ingredients and recipes has helped tremendously).

Kyle and I are catering a wedding of 90 this weekend but we are surprisingly not stressed about the whole thing. We bought all of our groceries today and we think it will run smoothly. I am making eclairs which means I have tons of chocolate on hand. Chocolate chips are like crack to me, so I decided to make a quick treat so if I am tempted for something sweet I don’t eat chocolate chips by the handful.

  • Quarter the bananas and freeze until firm. Insert a lollipop stick in each banana. Place back in the freezer until chocolate is ready.
  • Melt chocolate in microwave or double broiler. Stir in sweetened condensed milk until smooth. If too thick to easily coat the banana add more sweetened condensed milk a TBS at a time.
  • Take bananas out of the freezer and dip each one in the chocolate. Use a spoon to completely coat the banana. Top the bananas with salted peanuts and freeze at least 5 minutes until eating.
