Basic way to make Chocolate Banana Pops

Well readers I have reached the 50 pounds lost mark. I began living a more healthy life January 1st (I took my resolution serious this year). All I have to say is anything is possible when you cut meat from your diet and exercise everyday. But I feel like I need to add: results not typical. I have always been able to lose weight quickly. It is the maintaining part that I have always had trouble with but I feel like I have really changed my life, eating and cooking habits (and being introduced to food blogs and so many healthy ingredients and recipes has helped tremendously).

Kyle and I are catering a wedding of 90 this weekend but we are surprisingly not stressed about the whole thing. We bought all of our groceries today and we think it will run smoothly. I am making eclairs which means I have tons of chocolate on hand. Chocolate chips are like crack to me, so I decided to make a quick treat so if I am tempted for something sweet I don’t eat chocolate chips by the handful.

To make chocolate-covered bananas, start by slicing your bananas in half. Insert a popsicle stick in the center. Prepare a baking sheet lined with wax paper. Melt the chocolate in the microwave or double-boiler, heating it in 30-second increments. Stir between each heating until it is smooth and glossy. Dip a banana half in the chocolate, coating the entire surface. Place the banana on the prepared baking sheet. Once completely set, place it in the freezer for several hours, or until solid.

If you don’t have a popsicle mold, you can simply use plastic cups. You should allow the chocolate to harden before storing the pops in a plastic bag. For a more decadent treat, try adding 1/4 teaspoon of nutmeg or cinnamon to your chocolate mixture. Alternatively, you can use 1/4 cup of unsalted peanut butter. Make sure you check the bananas before freezing, or they may be too icy.
