How to make Blueberry Salsa, finally a savory blueberry recipe

 

I love Blueberry Salsa.

Which is a good thing, because I normally only love things that are bad for me (like chocolate covered pretzels and Taco Bell burritos). But lately I have been wanting blueberries in a non-sweet sort of way.

Jeffrey’s Blueberry Lobster Pot Pie was such a disaster (on last weeks episode of Next Food Network Star) that I felt challenged to make something savory with blueberries. By the way, I am going to Austin on the 17th for the Next Food Network Star casting. Wish me luck!

I made Grilled Chicken with a Blueberry Salsa. It was outstanding! The salsa has a whole jalapeno in it which gives it heat, but the blueberries and lime juice really tone down that heat. My blueberries were very tart, I think with some nice sweet blueberries this would taste even better. If you have blueberries laying around and you are tired of muffins, cobblers and pies, try out this salsa.

  • Grill Jalapeno until nice and charred, about 5 minutes. Place in a Ziploc bag for 5 minutes so the pepper will steam and the charred pieces will be easy to remove. Chop up pepper, throw away seeds (or add if you want a LOT of heat!)
  • Puree 1 1/2 cups of the blueberries. You don't want to puree the berries so much that its liquid, but you don't want full berries either.
  • Add the jalapeno to the blueberry puree and add the rest of the ingredients.
