Blueberry Salsa

A Fresh & Easy Blueberry Salsa is sweet and tangy and perfect for summertime. It is a great accompaniment to chips, fish, or chicken. Use the remaining cup of blueberries to garnish the dish. Alternatively, you can omit the cilantro and heat up the salsa by simmering it in a small saucepan for 15 minutes. Here are some helpful tips for making a Fresh & Easy version of Blueberry Salad:

Ingredients
  

  • 1 Jalapeno
  • 2 cups Blueberries
  • 1/2 cup Onion chopped
  • 1/2 cup loosely packed Cilantro chopped
  • 1.2 cup loosely packed Basil chopped
  • 3 T Lime Juice
  • 1/2 t Salt

Method
 

  1. Grill Jalapeno until nice and charred, about 5 minutes. Place in a Ziploc bag for 5 minutes so the pepper will steam and the charred pieces will be easy to remove. Chop up pepper, throw away seeds (or add if you want a LOT of heat!)
  2. Puree 1 1/2 cups of the blueberries. You don't want to puree the berries so much that its liquid, but you don't want full berries either.
  3. Add the jalapeno to the blueberry puree and add the rest of the ingredients.
