This Caramelized Onion and Fennel Spinach Salad is a perfect side dish to a grilled chicken or a grilled steak. The flavor combination of fennel and red onion is delicious. I had big plans today.

I wanted to go to the mall and spend Christmas money (by the way, I hope everyone had a great Christmas!) Then I wanted to go to Target and use a gift card on a really cute dress or something. Maybe some earrings. Then I needed to return a few fugly undesirable Christmas presents I received.

In between all that I planned on getting a latte or cappuccino, depending on my mood. Maybe a muffin also.

But if I was going to be gone from home for a few hours then I thought I ought to take Holly for a walk. Afterall, shes an Aussie and they need to be walked everyday. An energetic dog cooped up in an apartment = a destructive dog.

I laced up my Nikes and started walking my usual two mile route with Holly. A few minutes into the walk a good song came on. The song? Love Game by Lady Gaga.

The song has a great beat and always gets me pumped up. I started to jog and my ankles felt weak, probably due to the fact that I am a few pounds heavier because of all the holiday food I ate. A few seconds later I felt my left ankle roll and totally fell on my face. Busted my ass. Ate the floor. Whichever you prefer.

Long story short, I may have broken my ankle or torn a muscle or something. I am one of the many uninsured Americans out there, and if I go to the doctor and it is just a bad sprain then I will have thousands of dollars in unnecessary medical bills. However if it is broken then it will still be broken tomorrow and the next day, and I can just go then when I am more sure.
So today I still did my shopping, I just did it online! I finally ordered a set of Lowel EGO lights and can’t wait to tell you what I think. I am also posting a recipe that I made about a month ago, just never shared. It’s a beautiful, light salad.

Caramelized Onion and Fennel Spinach Salad on Puff Pastry

Instructions
 

  • Unroll the puff pastry sheet on a floured surface. Cut in four quarters. (Optional: Using a jagged edge pastry cutter, cut the edges and place on top of the edges as shown in the top picture, to create a border.)
  • Whisk an egg with 1 tsp salt and brush lightly on top of the puff pastry. Use a fork and score the dough (which means to poke holes in the dough). Bake for at least 6 minutes, until golden brown.
  • In a large saute pan on medium heat add the TBS of butter. When melted add the onions and fennel. Caramelize for at least 8 minutes on medium heat until translucent. Add the ginger and stir for at least three minutes until aromatic.
  • Remove the pan from the heat and add the spinach, salt and pepper and toss with tongs until the spinach is fulling mixed with the onions and fennel. The warm pan will slightly wilt the spinach.
  • Place salad on each puff pastry square and serve immediately.

Notes

This is a great meal that I had a few days in a row. I had the puff pastry squares already made and the salad is quick to make in a pan. This was a great light lunch for myself, but would also be great served as the ’salad course’ during a meal. The light and crispy puff pastry was a perfect base for this salad and I used the same jagged edge idea as I did in the edible cheese board I made. The salad was simple, yet a great combination of flavors. Fennel and ginger were made for each other.
