Oatmeal Creme Pies are a delicious treat that has been satisfying families since 1960. The first snack sold under the Little Debbie brand name, these biscuits are made from whole grain oats, molasses, cinnamon, and natural flavors. They come in family packs or single-serve servings and are also gluten-free. They are an excellent treat for a snack on the go.

When I was a kid, I had a problem. A candy, cookies, and sweets problem. Meaning, I ate too much of it. If there was candy in the house it was mine. If there was trail mix in the house, then I was going to pick all the M&Ms out of it and leave the nuts and raisins for everyone else. And if there were any oatmeal creme pies that were not hidden good enough for me not to find, then I was going to savor them.

Part of me hates the constant sweet tooth. The more sugar you eat, the more you have to work out. And thats not an equation I like. However, when choosing a career they say to do what you love. Well, I love sweets. Always have, always will.

My favorite packaged snacks used to be oatmeal creme pies, star crunch, cosmic brownies and nutty bars. Basically, anything  decadent and rich, sweet and buttery. Oatmeal Creme Pies are the best for sure. Did you notice  that I said ‘used’ to be favorites? I have stopped buying desserts like this since I usually have something homemade and delectable in the house at all times.

A few days ago I sent Kyle to the store for toilet paper, and he comes home with all sorts of groceries I wouldn’t normally buy, including oatmeal creme pies. He started eating them and wouldn’t stop gushing about how good they are. Which frustrates me. Out of all the baking I do, why is Little Debbie getting the attention?

So I went on a mission to recreate the oatmeal creme pie, but better. I wanted my cookie to be rich and spiced. I wanted it to be soft but have a slight crisp on the edge. And I wanted the filling to have more flavor as well, and not just be this sweet white goo.

Oatmeal Creme Pies

Oatmeal Creme Pies are delicious and addictive. They are best eaten warm. If you'd like to freeze your Oatmeal Cream Pies, wrap them in plastic wrap and freeze them for up to 60 days. You can then thaw them at room temperature or overnight in the refrigerator. If you prefer, you can use butter instead of Crisco. However, it must be melted before using.

Ingredients
  

  • 1 cup Butter softened
  • 3/4 cup Brown Sugar
  • 1/2 cup Sugar
  • 1 TBS Mollasses
  • 1 tsp Lemon Juice
  • 1 tsp Vanilla
  • 2 Eggs
  • 1 1/2 cup AP Flour
  • 1/2 tsp Salt
  • 1 tsp Baking Soda
  • 1/2 tsp Cinnamon
  • 1 1/2 cup Quick Oats
  • 1 TBS Hot Water
  • 1/4 tsp Salt
  • 1 7oz jar Marshmallow Fluff
  • 1/2 cup Shortening
  • 1/3 cup Powdered Sugar
  • 1/2 tsp Vanilla

Instructions
 

  • preheat oven to 350 degrees
  • In a large bowl, cream together butter, sugars, molasses, lemon juice, vanilla and eggs. Mix until combined.
  • In a separate bowl combine flour, salt, baking soda and cinnamon.
  • Add the dry ingredients to the wet ingredients and mix until fully combined. Add oats and mix again.
  • Drop dough by the TBS full on parchment lined baking sheets.
  • Bake for 10 – 12 minutes, or until just starting to brown around the edges.
  • In a small bowl dissolve salt in water.
  • Combine fluff, shortening, powdered sugar and vanilla in a large bowl. Mix on high speed until fluffy. Add the water and continue to mix until mixture is creamy and glossy.
  • Once cookies have cooled, add 1 TBS marshmallow filling to the backside of one cookie, and sandwich with another cookie.

These cream pies are utterly delicious. Totally mouth watering and amazing. I brought some to work and I saw 2 people completely break their diets, and almost saw a fight break out over the last one. They are that good. The cinnamon, nutmeg and mollasses add a depth to the cookie that isn’t in the Little Debbie version. And the filling tasted like sweet vanilla marshmallow. Total crowd pleaser.
