Grilled Chicken Panini

Ingredients
  

  • 3 Tomatoes chopped
  • 2 TBS Water
  • 2 TBS Sugar
  • 1/2 tsp Salt
  • 1/2 tsp Fresh Black Pepper

Instructions
 

  • Chop up the tomatoes and push off your cutting board into a saute pan (I say push off the cutting board because you want the inside juices and seeds).
  • Add all other ingredients and turn heat to medium low.
  • Simmer for 10 - 15 minutes, until thick. Use either warm or cold.

Notes

Tomato Confit is great on paninis, sandwiches and especially bruschetta. The sugar brings out the sweetness in the tomatoes which I normally don't get to taste when I eat them raw. This was enough for 6 paninis, so technically everyone only got a teaspoon of sugar. Not bad!
