Trail Mix Cupcakes
Trail Mix Cupcakes are a great way to get the family involved in healthy snacking. They can be packed with trail mix, which is a healthy snack. Ingredients
- 1 1/2 cup AP Flour
- 1 cup Sugar
- 1 1/2 tsp Baking Powder
- 1/4 tsp Salt
- 1/2 cup Butter cubed and softened
- 1 Egg
- 2 Egg Yolks
- 1 1/2 tsp Almond Extract
- 1/3 cup Sour Cream
- 1/2 cup Milk
- 1 cup Trail Mix grind the nuts
- Trail Mix for topping
Instructions
- preheat oven to 350 degrees
- Combine the first four ingredients in the bowl of an electric mixer.
- Next add the softened butter cubes, egg and egg yolk, almond extract and milk. Mix until fully combined (there may be small pieces of butter in the batter, thats OK!)
- Fold in the trail mix. I did grind the nuts so they weren’t as big, but left the M&Ms; and raisins whole.
- Divide between 12 prepared cupcake wrappers and sprinkle whole nuts, raisens and M&Ms; on top. Bake for 20 minutes. Let cool.
