Soft Chocolate Chip Cookies

This recipe makes one delicious treat with two kinds of cookies: chocolate chip and peanut butter. To make them, simply combine both ingredients. To prepare the cookies, start by matching their sizes and shapes. Pipe frosting on the bottom and middle of the first cookie, working outwards. Place the second cookie on top of the frosting, and give it a soft squish. When finished, store remaining cookies in an airtight container.

Ingredients
  

  • 2 1/4 sticks Butter room temperature
  • 1 cup Brown Sugar
  • 1/2 cup Powdered Sugar
  • 2 Eggs
  • 1 tsp Vanilla Extract
  • 2 3/4 cup AP Flour
  • 1 tsp Baking Soda
  • 1/2 tsp Salt
  • 1 1/2 cups Chocolate Chips
  • 1/2 cups Pecan pieces

Method
 

  1. preheat oven to 375 degrees
  2. Beat together butter and sugars until smooth. Add the eggs and vanilla and continue to beat until combined.
  3. Sift together the flour, baking soda and salt and stir into the butter mixture. Add the chocolate chips and nuts and stir until just combined.
  4. Drop rounded tablespoon fulls of the dough onto ungreased baking sheets about 2 inches apart. Bake for 10-12 minutes.
  5. Allow to cool on baking sheet for 2 minutes before transferring to a wire rack.

Notes

To assemble slather at least 2 TBS of cream cheese frosting on the bottom of a cookie and smear to the edges. Place another cookie on top. Roll in sprinkles. Repeat.
