- preheat oven to 350 degrees
- Place the almonds on a baking sheet and in a preheated oven for 10 minutes. (If the almonds are already roasted, skip this step) Set the almonds aside and let cool.
- In a medium sized sauce pan add the honey, water and oil. Bring to a boil and add the almonds. Stir around for a few minutes, until all of the liquid has been absorbed by the nuts.
- Transfer into a medium bowl and toss with the sugar and salt.
- Spread back on the baking sheet with wax paper, let cool.

These almonds are addicting! The coating is light and doesn't fall off in big clumps some other honey roasted almonds I have had. You can easily add nutmeg, ginger, cinnamon or other spices to the sugar for additional flavor. And I don't see why you couldn't do the same process with other nuts. Honey Roasted Cashews anyone?
