A chicken Caesar pasta salad is a quick and healthy meal to enjoy anytime. It is packed with tasty fixings and is very easy to prepare. It includes lettuce, tomatoes, and pasta noodles. For a hearty lunch, add some smoked bacon or anchovy fillet. Once the salad is prepared, it can be served immediately or chilled. Once the dressing is prepared, it can be served for a week.

Ingredients
  

  • 3 cups Bow Tie Pasta cooked and warm
  • 2 cups around 8 oz Chicken, cooked and sliced
  • 2 Roma Tomatoes diced and seeded
  • 1 Garlic Clove mined
  • 1/4 cup Green Onions chopped
  • 2/3 Parmesan shaved
  • 1/4 cup Fresh Basil thinly sliced
  • 1/2 cup Croutons
  • 1/2 tsp Salt
  • 1/2 tsp White Pepper
  • 1/2 cup Low Fat Caesar Dressing recipe below

Low Fat Caesar Dressing

  • 4 oz Firm Tofu
  • 1/2 cup Sour Cream
  • 1 TBS Lemon Juice
  • 1 TBS Honey
  • 1 TBS Dijon Mustard
  • 1 tsp Worcestshire
  • 1 garlic clove
  • 1 handful of Parmesan
  • 1 tsp Salt
  • 1 tsp Black Pepper

Instructions
 

  • Gently toss all ingredients.

Low Fat Caesar Dressing

  • Combine all ingredients in a blender or food processor and combine until creamy and smooth.
  • For a silkier texture, strain the dressing (which I did).
