Rice Crispy Easter Eggs

Rice Crispy Easter Eggs are a great way to celebrate the holiday and teach children about the Christian faith and Easter. They can be made in advance and frozen, and can be stored in the freezer or refrigerator for up to a week. If you're looking for a healthier version, you can always make them using white chocolate or milk instead of milk. They'll be even better when you add a sprinkle on top.

Ingredients
  

  • 3 TBS Butter
  • 1 bag Marshmallows
  • pinch Salt
  • 3 cups Rice Crispies
  • 1/2 cup Chocolate Covered Sunflower Seeds

Instructions
 

  • In a large microwave safe bowl, add butter and marshmallows and microwave one minute. Stir with a wooden spoon until the mixture is smooth and completely melted, and add pinch of salt and rice crispies.
  • Mix with wooden spoon until rice crispies are completely coated. Add chocolate covered sunflower seeds and mix. Let cool for a few minutes.
  • Divide treats into 32-36 individual portions, then roll into balls, then into egg shapes.

Variations:

  • Peanut Butter: Add 1/2 cup peanut butter (crunchy or smooth) to the butter and marshmallow mixture after it has been melted, and mix in until smooth. Make the rest as normal, once the eggs are formed let rest at least 30 minutes.
  • Chocolate: Use cocoa crispies and follow recipe as normal.
