Strawberry Salsa

Strawberries are a healthy alternative to tomatoes. They contain extra fiber per cup, making them an excellent addition to any dish. This delicious salsa is a refreshing appetizer that's great for summer! It's also the perfect topping for grilled chicken or fish. And it's a fun party food! It's easy to make, too! But it is important to choose ripe strawberries, as soft berries will not stand up to the salt in the salsa.

Ingredients
  

  • 1 cup Strawberries chopped
  • 1 can Diced Tomatoes drained (I used spicy withOUT chiles)
  • 1 small White Onion chopped
  • 1 Jalapeno seeded and minced
  • 2 Garlic Cloves minced
  • 2 TBS Lime Juice
  • 1 TBS Vegetable Oil
  • pinch Salt

Instructions
 

  • Combine all ingredients in a large bowl and mix well. Chill, covered for 2 hours before serving.

This wasn’t my first, or last, time to experiment with fruit salsa. Last summer I made Blueberry Basil Salsa which was really tasty, Blueberry, Pineapple and Hatch Chile Pepper Salsa, and just the other day I made Island Chicken Tenders which had a Pineapple, Jalapeño, Mango salsa. I love how fruit salsa can make a somewhat dull dish into a palate pleasing, bright meal. Perfect for the warm summer evenings.
