Cilantro Lime Chicken

Ingredients
  

  • 2 T Fresh Cilantro minced
  • 3 T Fresh Lime juice
  • 1 1/2 T olive oil
  • 4 6oz Chicken Breast, skinless/boneless
  • 1/4 t salt
  • Cooking Spray

Avocado Salsa

  • 2 Plum Tomatoes chopped
  • 3 T Red Onion finely chopped
  • 2 Ripe Avocado peeled and chopped
  • 1 T Lime Juice
  • 1/4 t Salt
  • 1/4 t Black Pepper

Instructions
 

  • Combine first 4 ingredients in a large bowl, toss and let stand 10 minutes in the fridge.
  • Heat a grill pan over medium-high heat and spray with cooking spray. Remove chicken from marinade, sprinkle with salt, and and add chicken to pan. Cook 6 minutes on each side or until done. (After flipping the chicken once pour the left over marinade on top).
