Or in my case, a rainy week.

I knew there would be a time when I couldn’t take pictures due to the weather. And now is that time. The rain has been going on for 5 days and the sun hasn’t peaked out once. I’ve been armed with my camera ready to take pictures just in case… because I have made some killer things in the past week!

And I am tired of the rain! Seattle bloggers, how do you do it? This has motivated me to get started on making a light box though. Anyone have any tips?

I recently had some left over puff pastry from the edible cheese board and wanted to make something light that I could enjoy for breakfast. A croissant or turnover seemed like the obvious choice but I didn’t like that idea. I wanted this to be lighter than that. I thought about my favorite puff pastry recipes and one of them happens to be a palmier, so I thought why not a breakfast palmier?

A Blueberry Mint Breakfast Palmier!

These were great. They ended up being delicious for breakfast and dessert (I love it when that happens!) The mint stands out and its surprisingly pleasant paired with blueberry. When you bite into a whole blueberry your heart will stop for a second. They are that killer!

You could use jam or any sort of quick fruit sauce to make a breakfast (or dessert) palmier. The possibilities are endless4

Blueberry Mint Palmier

This recipe is a tasty treat that's both refreshing and delicious. If you like blueberries, you'll love this recipe! Combine blueberries, sugar and water and simmer on low heat for 10 minutes. Remove the blueberries from the heat and crush them with a fork or potato masher. Fold fresh mint into the blueberry sauce. Allow the blueberry sauce to cool. Whisk an egg in a bowl and spread it over the blueberry sauce. Place the puff pastry on top and leave the edges of the puff pastry clean.

Instructions
 

  • preheat oven to 400 degrees
  • pan spray one baking sheet
  • Flour your work surface and roll puff pastry to a 10x16 inch square, and until the seams are smooth. Place in the refridgerator and make the sauce. The puff pastry will be easier to roll when its cooled down a few degrees.
  • In a small pan combine the blueberries and sugar and tablespoon of water. Turn on low heat and let reduce until syrupy at least 10 minutes stirring occasionally. Use either a potato masher or a fork and crush most of the blueberries.
  • Add the fresh mint and fold into the blueberry sauce. Cool completely.
  • Whisk the egg with a fork in a small bowl and set aside. Take the puff pastry and blueberry sauce and place about 3 tablespoons in the middle of the puff pastry. Spread the sauce all over the puff pastry but leave the edges clean.
  • Fold in the left and right sides of the puff pastry about one inch. Fold the puff pastry equally on both sides until it meets in the middle.
  • Use a pastry brush to brush egg wash on the all exposed parts of puff pastry. Use a sharp knife and cut 12 slices in the puff pastry. Quickly place on a prepared baking sheet. Bake for 15 minutes or until edges are golden brown.
  • Let cool at least 5 minutes.
